Brut Nature sparkling wine with its bottled yeasts. A difficult wine to place in common production structures. Tumiama was born from the owner’s desire to try other production paths without mental limits. These things are felt in every part of the production: making sparkling wine with a semi-aromatic variety, using slightly overripe grapes, aging that never stops (at least 60 months) until the bottle is opened because the lees are not eliminated after the degorgement. The result of all this is a sparkling wine that shows the hidden and unexplored soul of Minutolo, soft aromas, and velvety perlage.

HARVEST
Hand-picked grapes, only from the vineyard Zingariello. Harvest middle of September.

AGING AND VINIFICATION
Aging not less than 60 months. During disgorgement, the lees inside the bottle are not eliminated. Then the refinement continues continuously until the bottle is opened.

Historical vineyard (1998) in Zingariello district. Alta Murgia 480 m. a.l.s., calcareous soil.
FERMENTATION
1st Fermentation: slow fermentation in steel tanks. 2nd Fermentation: in the bottle.

A sparkling wine that speaks of origin
The limestone soil of the Alta Murgia defines the most authentic character of Minutolo. From this essential, luminous, and rugged landscape takes shape an unconventional sparkling wine: a bubble that doesn’t seek the easiest path, but lets time, the lees, and the deep identity of its land speak.
Tumiàma, the Murgia that keeps evolving
A living wine, in constant transformation, capable of telling the story of a less predictable, more intimate and experimental Murgia. In the glass it carries aromatic herbs, ripe fruit, enveloping notes, and a velvety effervescence: a vertical, deep, elegant sip that seems to hold time and slowly give it back, one taste at a time. The most direct way to enter the spirit of Tumiàma: let yourself be guided by its substance, its energy, and an identity that follows no already-written pattern.
Full straw yellow color; after the first 2 or 3 years in the bottle, light golden hues become visible.

Intense nose, wide bouquet, opening with an array of aromatic herbs, sage and rosemary above all, followed by hints of citrus and touches of white-fleshed fruit.
Medium-bodied on the palate, an added value in terms of drinkability, excellent persistence and remarkable coherence with the nose.
The finish is elegant, supported by good acidity.
