Primitivo IGP Puglia

Symbol is our highest expression of Primitivo grapes. A naturally fruity, soft, and well-structured variety, with all these characteristics preserved while adding elegance and freshness. A bottle whose main quality is the perfect balance between power and elegance.

HARVEST
Hand-picked grapes. The ripest grapes are selected from a particular part of our Primitivo vineyard, located in the Santa Sofia district, a vineyard with 50-year-old vines.

AGING
The wine is divided into two parts and ages in two different ways: 50% ages for 12 months in steel tanks in contact with its fine lees, while the remaining 50% ages for 12 months in large oak barrels. The two parts are blended at the time of bottling, and the bottles rest for a further 12 months in the cellar.
SULFITES
~ 50 – 55 mg/l.
VINEYARD
Santa Sofia district. Alta Murgia 510 m. s.l.m, sandy calcareous soil. The grapes are selected from a specific part of the vineyard, which has mostly volcanic nature soil.
PRODUCTION
Fermentation in steel tanks at a controlled temperature. Half of the wine aging in steel tanks for 12 months, the other one for 12 months in big oak barrels. Follow another 12 months in the bottle.

Depth, minerality, and character
Symbol is born from a selected plot within a Primitivo vineyard whose vines, roughly 50 years old, sink their roots into a sandy-limestone soil with a volcanic matrix present underground: a rare condition that helps give the wine depth, minerality, and character.
The ultimate expression of a signature red
Symbol is an intense, elegant, and structured red, which brings to the glass the strength of its land, but also the patience of time, finding its balance between power, freshness, and finesse. The altitude and the nature of the soil help define a rich, structured, and deeply identity-driven wine. On the palate, this intensity translates into balance: the power of ripe fruit meets spiced notes, well-integrated tannins, and a pleasant freshness that sustains the drink.
Full straw yellow color; after the first 2 or 3 years in the bottle, light golden hues become visible.

Intense nose, wide bouquet, opening with an array of aromatic herbs, sage and rosemary above all, followed by hints of citrus and touches of white-fleshed fruit.
Medium-bodied on the palate, an added value in terms of drinkability, excellent persistence and remarkable coherence with the nose.
The finish is elegant, supported by good acidity.
