Tasting Notes
Full ruby red color. The intense nose opens with green sensations, tomato leaf, along with hints of still-crunchy fruit, cherry, and light spiced notes on the back, black pepper. The palate is straight and sharp, the wine leaning toward its firmer components, the tannin is vigorous, and acidity and savoriness complete a palate that’s never banal. The finish is fairly long, where the lightly spiced sensations return.
Recommended Pairings
Fresh pasta with sausage and mushroom sauce, donkey braciole in sauce, Indian curry pork.

Historic vineyard (1998) in Contrada Zingariello. Alta Murgia, 480 m above sea level, limestone soil.
Vineyard
Contrada Santa Sofia. Alta Murgia, 510 m above sea level, sandy-limestone soil.
Production
Fermentation in stainless steel at controlled temperature, with selected native yeast strains. Aging of 5 months in stainless steel tanks in contact with fine lees.
