Tasting Notes
Full straw yellow color, with light golden reflections appearing after the first 2 or 3 years in the bottle.
Intense nose, wide-ranging bouquet, opening with an array of aromatic herbs, sage and rosemary above all, followed by citrus hints and touches of white-fleshed fruit. Medium-bodied on the palate, with added value in terms of drinkability, excellent persistence, and remarkable consistency with the nose. The finish is elegant, supported by good acidity.
Recommended Pairings
A spirited, intense, and long wine, it needs to be contextualized and ‘tamed’. The recommended pairings lean toward
fatty fish with good spicing, but also white meats with medium richness.

Historic vineyard (1998) in Contrada Zingariello. Alta Murgia, 480 m above sea level, limestone soil.

Production
Fermentation in stainless steel at controlled temperature, with selected native yeast strains. Aging of 5 months in stainless steel tanks in contact with fine lees.
