HARVEST

The grapes are selected in the field and hand- picked, in
the second week of September.

VINEYARD

Santa Sofia district. Alta Murgia 510 m. s.l.m, sandy
calcareous soil. The grapes are selected from a specific
part of the vineyard, which has mostly volcanic nature soil.

PRODUCTION

Fermentation in steel tanks at a controlled temperature.
Half of the wine aging in steel tanks for 12 months, the
other one for 12 months in big oak barrels. Follow another
12 months in the bottle.

SULFITIES

~ 50 – 55 mg/l
