Tasting Notes
Gold yellow color extremely bright. Intense nose with a full and round bouquet, yellow fruit, notes of dried fruit, and a good minerality quite perceptible on the nose. On the palate, it is immediately perceived that it is a full-bodied wine with good freshness and great minerality. These characteristics lengthen the persistence and support the dried fruit finish.
Food Pairing
An elegant and full-bodied wine, the complexity and structure on the palate allow this wine to be paired
with medium-fat dishes, but also with good structure and great persistence.
TECHNICAL PAIRING Pappardelle with rabbit ragù sauce.
“HEART PAIRING” Toasted bread with buffalo mozzarella and dried tomatoes.

Harvest
Hand-picked grapes, in the second week of September.
Vineyard
San Domenico district. Alta Murgia 420 m. a.l.s., medium textured soil with presence of clays and calcareous rocks of Gravina.
Production
Fermentation in steel tanks at a controlled temperature. The wine ages in steel tanks for 4 months in contact with its fine lees. Thereafter, the wine ages for another 4 months in the bottle.
