Vinification process and refinement
The grapes are harvested by hand, removed from the stalks and gently pressed. A brief cold maceration follows this irst stage with a fermentation at 16 °C for two weeks.
Re inement with recurring batonnages for three months
Tasting Notes
Crystalline, straw-yellow with greenish reflections that reveal golden nuances which evolve over time. Moderately intense and complex. Fruity notes of exotic fruit and very fresh floral hints on the nose. Sweet and soft notes on the palate. Fresh and savory. A little-bodied wine, with very little alcohol content. It is used to accompany informal aperitifs or at the end of a very sober meal.
Suggested combinations
Given the characteristics of the wine, Leble’ accompanies well some dishes with moderate sweetness, little structured and little sapid. Just think of the famous marzipan, typical of the Apulian tradition, or a beautiful composition of quite ripe fresh fruit. Interesting pairing with almond paste.
