Hand-picked grapes in the second week of September.

VINEYARD

San Domenico district. Alta Murgia 420 m. a.l.s., medium-
textured soil with presence of clays and calcareous rocks
of Gravina.

PRODUCTION

Fermentation in steel tanks at a controlled temperature. The wine ages for 5 months in steel tanks in contact with its fine lees.

SULFITIES

~ 40-45 mg/l
