HARVEST
The grapes are hand-picked all together in the second
week of September.
VINEYARD
San Domenico district. Alta Murgia 420 m. a.l.s., medium textured soil with presence of clays and calcareous rocks of Gravina.
PRODUCTION
The first and second fermentation in a steel autoclave. The wine ages in the same autoclave for 6 months in contact with its fine lees.
SULFITIES
~ 60 -70 mg/l
