Rosso IGP Puglia

Selvato is the second wine produced in the Colli della Murgia, the first vintage of 1993. It is an authentic expression of our territory, a blend of Primitivo 50% and Aglianico 50%, two grape varieties that represent the essence of Apulian wine.

HARVEST
Hand-picked grapes. The grapes are de-stemmed and lightly pressed within 8 hours of the harvest. Primitivo: harvested in the first week of September. Aglianico: harvested in the second ten days of October.
VARIETY
Rosso IGP Puglia
AGING
Separate aging, 12-18 months in steel tanks. Before bottling, the two wines are blended and then the bottle rests for another 8-10 months in the cellar.
SULFITES
~ 50 – 55 mg/l.
VINEYARD
Santa Sofia district. Alta Murgia 510 m. a.l.s., sandy calcareous soil.
PRODUCTION
Separate production of the two varieties until bottling. Fermentation in steel tanks at a controlled temperature. The wine ages for 12 months in steel tanks, and another 10 months in the bottle.

Selvato è uno dei vini che raccontano la storia più autentica di Colli della Murgia: nasce dall’incontro tra Primitivo e Aglianico, due vitigni simbolo della Puglia, lavorati separatamente fino all’imbottigliamento per custodirne identità e carattere. Il risultato è un rosso intenso, strutturato e profondamente territoriale, in cui la morbidezza del Primitivo incontra la forza dell’Aglianico. Un vino che porta nel calice memoria, radici e continuità, restituendo tutta l’essenza della Murgia.
Full straw yellow color; after the first 2 or 3 years in the bottle, light golden hues become visible.

Intense nose, wide bouquet, opening with an array of aromatic herbs, sage and rosemary above all, followed by hints of citrus and touches of white-fleshed fruit.
Medium-bodied on the palate, an added value in terms of drinkability, excellent persistence and remarkable coherence with the nose.
The finish is elegant, supported by good acidity.
