Description

Tasting Notes

Full straw yellow color, with light golden reflections appearing after the first 2 or 3 years in the bottle.
Intense nose, wide-ranging bouquet, opening with an array of aromatic herbs, sage and rosemary above all, followed by citrus hints and touches of white-fleshed fruit. Medium-bodied on the palate, with added value in terms of drinkability, excellent persistence, and remarkable consistency with the nose. The finish is elegant, supported by good acidity.

Recommended Pairings

A spirited, intense, and long wine, it needs to be contextualized and ‘tamed’. The recommended pairings lean toward
fatty fish with good spicing, but also white meats with medium richness.
TECHNICAL PAIRING Pistachio-crusted salmon fillet.
HEART PAIRING Murgia vegetable timbale (wild chicory and cardoncelli mushrooms).
ROCK N’ ROLL PAIRING Paella valenciana.
