HARVEST
The grapes are selected in the field and hand- picked, in
the second week of October.
VINEYARD
San Domenico district. Alta Murgia 420 m. a.l.s., medium-
textured soil with presence of clays and calcareous rocks
of Gravina.
PRODUCTION
Fermentation in steel tanks at a controlled temperature.
The first aging is in French oak tonneaux. The second
refinement in the bottle for 12 months.
SULFITIES
~ 50 – 55 mg/l.
