HARVEST
Hand-picked grapes, in the first week of September.
VINEYARD
Santa Sofia district. Alta Murgia 510 m. a.l.s., sandy
calcareous soil.
PRODUCTION
The must is obtained with the ‘draining’ process (the liquid
does not remain in contact with the skins). Fermentation in
steel tanks at a controlled temperature. The wine ages for
6 months in steel tanks.
SULFITIES
~ 60 – 70 mg/l.
