Vinification process and refinement
The grapes are harvested by hand and directly pressed, avoiding the crushing. A cold static settling follows this irst stage with a fermentation at 16 °C for two weeks. Re inement with recurring batonnages until the next spring.
Tasting Notes
Crystal clear, straw yellow with light green reflections, which give a glimpse of evolving golden shades. Intense and complex. Exotic fruit aroma: mango, lychees, passion fruit and peaches, apricot, light pink grapefruit as well; wide bouquet of floral notes, with a great presence of the Mediterranean scrub, especially thyme, rosemary and wildflowers. Especially at its most evolved, you’ll find overflowing, almost ethereal, mineral notes. The mouthfeel is dry, warm and supple. A surprising freshness supports great minerality. It’s a full-bodied wine, balanced, intense and persistent and its freshness redesigns the map of white wines from Apulia.
Recommended Pairings
A dish with nice sweet and fatty tendencies, heavily spiced with a good, savory, persistance. Stuffed pasta with buffalo mozzarella and codfish, cardoon timballo, oysters au gratin, raw yellowtail with citrus fruits.
