Vinification process and refinement
Selection of the best
Primitivo bunches, which are harvested by hand and put in little
boxes. The fermentation takes place in steel tanks at a controlled
temperature 25 °C. The 60% of the product is re ined for 24 months in big French durmast barrels. The remaining product rests in steel tanks. After the bottling, the wine remains in the boyyle for 6 months before the selling.
Tasting Notes
Clear, deep ruby red with garnet shades. Intense and very complex. The aroma brings notes of very ripe red fruit like marasca cherries, black cherries and redcurrant; the floral notes of violet and red rose are lively. It evokes nuts and has spicy notes of pepper, leather tobacco, chocolate and vanilla. The mouthfeel is dry, warm and soft. Quite fresh and savory, with lively tannin, rounded by woody refinement. A wine with great structure, balanced, intense and quite persistent.
Recommended Pairings
Perfect for succulent and fatty dishes, savory, spiced too and with a bitterish tendency. Dishes with great persistence in flavor and smell. A bountiful roast beef, very seasoned or herb cheeses, slow-cooked meat. A gret discovery would be to pair it with the typical “ruccolo” from Gravina in Puglia (olive oil calzone with onion and raisins).
