Especially at its most evolved, you’ll find overflowing, almost ethereal, mineral notes. The mouthfeel is dry, warm and supple. A surprising freshness supports great minerality. It’s a full-bodied wine, balanced, intense and persistent.
Perfect pairing: a dish with nice sweet and fatty tendencies, maybe not too spiced with a good, savory, persistance. Oven baked codfish, cabbage gratin or a white zucchini parmigiana. Special pairing with fried fish.
