Clear, ruby red with garnet reflections. Intense and quite complex. It brings notes of mature red fruit, prune and marasca cherry; a slight vegetal hint but intense floral notes of red rose and shades of wild rose. Spicy hints of black pepper, tobacco and leather. It gives a dry, warm and soft mouthfeel. Quite fresh and savory, tannic but smooth. It’s a full-bodied wine, round, intense and quite persistent.
Perfect for succulent and fatty dishes, savory, spiced too and with a bitterish tendency. For example, a grilled sliced beef, ovine ragu or, following Apulia tradition, an oven baked timballo with lamb and cardoons. Amazing pairing with rotisserie chicken.
