The fermentation takes place in steel tanks at a controlled temperature. Permanency in temperature-controlled tanks with no oxygen. After the malolactic fermentation, the wine remains in contact with its own dregs. Re inement in bottle for 6 months before the selling.
Clear, with an intense ruby red colour. Intense and quite complex. Plummy and berrylike, it brings notes of ripe fruit to the nose and a wide floral bouquet, with an emphasis on wild rose. Red rose and violet. Herbaceous notes are immediate as well. Especially at its most evolved, you’ll find silken hints of leather and toasty notes. Spices, black pepper, almost ethereal. The mouthfeel is dry, warm and supple. A surprising freshness supports great minerality. Tannin is lively but never overwhelming. A full-bodied wine, balanced, intense and very persistent.
Perfect for succulent and fatty dishes, savory, spiced too and with a bitterish tendency. Dishes with great persistence in flavor and smell. For example, a big grilled steak or a red meat ragu. Splendid pairing with very seasoned cheeses as well
